Valentine’s Day Desserts

Dave and I took a baking class at Kitchen Bits tonight. The class consisted of 10 other people who all sat around a kitchen island while our instructor lectured and baked. She made two recipes, chocolate hazelnut mousse torte and boston cream pie.  I learnt a few great tips along the way. For example, always bake with eggs at room temperature. I’ve always ignored this instruction in recipes but apparently room temp. eggs help to induce more air into the batter among other things. Maybe I’ll be organized enough to try it out in the future. Usually if I bake it’s on a whim. I was also introduced to a life-changer – white-chocolate whipped creme. OMFG! Seriously next time put in white chocolate cubes and a little vanilla into the creme instead of sugar, it will change your life.

White Chocolate Whipped Cream

3 oz white chocolate
1 cup 35% cream
1 tsp vanilla extract

Bring cream to boil, turn off heat and add chocolate. Stir to melt and add vanilla. Refrigerate until thoroughly chilled. Whip just until soft peaks form.

At the end each of us got to eat the result – the best part! Both Dave and I didn’t eat dinner so by 8:00 pm after watching food for 2 hours we were starving. So much so that we were picking at the leftover cake bits.  We donated our chocolate cake doggie-bag to my grandfather who is the hospital on the way home. He ate it right up so that is three stamps of approval.
